Coconut Cream Pie
Ingredients:
2 cups coconut milk
1 cup natural sugar
2 Tbs cornstarch
1 tsp margarine (optional)
2 tsps coconut extract, almond extract, or vanilla
Dash salt
Prepared baked pie crust or cookie crumb crust
1/3 cup shredded coconut
Directions:
Mix cornstarch with 1/4 cup of the liquid.
Put coconut milk, sugar, cornstarch mixture, and salt into a saucepan.
Cook over medium heat, stirring constantly, until mixture comes
almost to a boil.
Turn down heat and simmer, stirring constantly, until thick.
Turn off heat.
Stir in margarine and extract.
Pour into pie shell.
Sprinkle with coconut shreds.
Chill very well.
Serve plain, or topped with whipped topping.
For an even richer pie, use canned coconut cream
in place of part or all of the coconut milk.
