Ingredients:
2 cups soymilk or rice milk
3/4 cup brown sugar
2 Tbs cornstarch
2 tsp margarine (or 1/4 tsp imitation butter flavoring)
1 tsp butterscotch flavor or vanilla extract
Dash salt
Directions:
Mix cornstarch with 1/4 cup of the liquid.
Put all except extract into a saucepan.
Cook over medium heat, stirring constantly, until mixture comes almost
to a boil.
Turn down heat and simmer, stirring constantly, until thick.
Turn off heat.
Stir in extract.
Let cool.
Pour into pre-baked pie crust, and chill.
